Hello, this is Harapeko Grizzly.
Do you like shrimp mayo?
I love it.
As I wrote in a previous article about crab mayo onigiri, among the convenience store "mayo" options, shrimp mayo is hall-of-fame level for me.
However, some people might think:
**"Shrimp mayo with plump shrimp coated in sweet and creamy mayo sauce..."
"It's fried food, so making it at home seems too difficult..."
So this time, I want to introduce a shrimp mayo recipe that has three key features:
- Only 1cm of frying oil in the pan
- Use one whole egg: egg white for the batter, egg yolk for the sauce. No waste.
- It tastes incredibly delicious

Let's get started!
Instructions
① In a bowl, mix 4 tbsp mayonnaise, 1 tbsp milk, 1 tsp ketchup, 1 tsp sesame oil, 1/2 tsp sugar, and 1/2 tsp vinegar.

Quick Tip!
Making the sauce first allows you to coat the shrimp immediately after they are fried.
② Separate one egg into yolk and white. Add 3 tbsp potato starch to the egg white bowl and mix. Add 200g peeled shrimp and mix well.

Quick Tip! Egg White + Potato Starch Batter
Using egg white as batter helps it solidify when heated, coating the shrimp perfectly.
This gives you
"Crispy outside, plump and juicy inside"
shrimp!
Note: Save the egg yolk for later, don't throw it away!
③ Add salad oil to the pan until it's about 1cm deep. Pan-fry the shrimp over medium heat until golden brown on both sides.

④ Remove the shrimp, add them to the sauce from step ① along with the egg yolk from step ②, mix, and it's done!

Tip! Add Egg Yolk at the End
Adding egg yolk at the end significantly enhances the richness of the sauce, creating a smooth and creamy mayo sauce.
By the way, mixing the egg yolk in is so fun because it looks so appetizing!

Plus, you use up the entire egg:
Egg white → Batter
Egg yolk → Sauce
No waste at all.
Plump shrimp coated in rich, creamy mayo sauce will make you eat rice non-stop!
